You'll need a soft ripe avocado for this recipe. It's a great healthy breakfast or lunch option and all you need is 10 minutes and a toaster to enjoy it. You can vary with different toppings and we've suggested a few below; try with one, none or a combination to suit your taste.
We'd suggest you get yourself an avocado saver, if you don't already have one to help stop the left-over half stay fresh for the next day. If you have a toaster at work, why not take 5 minutes the night before to organise the ingredients you need to make this in the office?
Ingredients
1 slice of sourdough or wholemeal bread
1/2 ripe avocado
Garlic powder (optional)
Pepper and salt to taste
Topping suggestions:
Mixed seeds
Egg - fried, poached or hard boiled and sliced if you're taking to work
Smoked salmon
Sauerkraut
Preparation
Combine the avocado, salt, pepper and garlic powder in a bowl and gently mush.
If you're having with an egg, put it on and while it's cooking, get your bread into toast.
Spoon your avocado mixture and onto your toast and add the topping
Want more flavour: Add herbs or spices to the avocado mix. We like parsley, coriander and chilli flakes.
