Banana and oat pancakes

Another simple pancake recipe for you to try. This makes a healthy option for dinner (particularly with all the toppings) if you want something quick and satisfying after a long day at work.


For the pancakes

  • 120ml milk (any)

  • 2 large eggs

  • 1 banana

  • 100g rolled oats

  • 2 tsp baking powder

  • 1-2 tbsp olive oil

Suggested toppings:

  • Handful of berries (like blueberries and/or strawberries)

  • Drizzle of raw honey

  • A few chopped almonds or pecans

  • A spoonful of coconut or live Greek yoghurt


  1. Blend the pancake ingredients until smooth.

  2. Heat the oil in a frying pan over a medium-high heat and fry spoonfuls of the batter for 2-3 minutes on each side until golden.

  3. Serve with toppings of your choice; we like to add all those listed but you can just use what you have available and create your own combination.

No banana: try apple puree instead
