Another simple pancake recipe for you to try. This makes a healthy option for dinner (particularly with all the toppings) if you want something quick and satisfying after a long day at work.
For the pancakes
120ml milk (any)
2 large eggs
100g rolled oats
2 tsp baking powder
1-2 tbsp olive oil
Handful of berries (like blueberries and/or strawberries)
Drizzle of raw honey
A few chopped almonds or pecans
A spoonful of coconut or live Greek yoghurt
Blend the pancake ingredients until smooth.
Heat the oil in a frying pan over a medium-high heat and fry spoonfuls of the batter for 2-3 minutes on each side until golden.
Serve with toppings of your choice; we like to add all those listed but you can just use what you have available and create your own combination.
