Like coffee? Love chocolate? Enjoy overnight oats? Then this one's for you. A healthy breakfast option that gives you a coffee and chocolate fix before 9am. What's not to love?!
Ingredients
For the oat base:
1/3 cup rolled oats
1 tsp chia seeds
1 tbsp pure maple syrup
1 tbsp raw cacao powder
1/4 tsp vanilla bean paste (or extract)
pinch salt
1/2 cup milky coffee (we make ours with an expresso shot topped up with oat milk)
For the topping:
1/3 cup of coconut or live Greek yoghurt
1 tsp pure maple syrup
2 tsp vanilla protein powder (plant based or whey, but chose a good one)
Optional extras to serve:
4 black cherries chopped*
Dark chocolate (at least 70%) to grate
*we buy frozen and defrost overnight in fridge
Preparation
Mix together the oat base ingredients in a container that has an airtight lid. Make sure the ingredients are well combined and then seal the container and put in the fridge overnight to set.
If you're using frozen fruit to top in the morning, pop those in the fridge to defrost overnight too.
Make the topping fresh in the morning, or prepare the night before and keep in a separate airtight container; just mix the yoghurt, maple syrup and vanilla protein powder together in a bowl.
To serve, simply spoon the yoghurt topping onto the oat base, chop and add the cherries and grate a dusting of dark chocolate over the top.
Alternative toppings: Sliced banana, chopped nuts (we like pecans or walnuts), blackberries
