We love this one for any meal of the day - quick, simple and packed with nutritious ingredients.
1 large egg
2 rashers bacon
1 slice of sourdough bread
salt, pepper and dried chives to sprinkle
Grill bacon, just how you like it. Our weekend treat is oven baked streaky bacon (just pop some baking paper on a baking tray, put the bacon on and oven bake for 15 minutes or so at 180C).
While the bacon is finishing off, put a little olive oil in a frying pan, heat up and fry your egg. We like ours over easy; just flip it over for the last 10 seconds so the top of egg white cooks without cooking the yolk through.
As soon as the eggs hit the pan, put the bread onto toast remember sourdough takes a little longer than normal bread and mash the avocado onto it. Season with some salt and pepper.
Top with the egg, sprinkle the chives and add the bacon.
