Ingredients
2 cups berries (fresh or frozen)
1 tbsp maple syrup
2 tbsp chia seeds
2 eggs
1/4 cup unsweetened almond or oat milk
4 slices of bread (wholemeal)
1 tbsp extra virgin olive oil
Preparation
Combine the berries, maple syrup and chia seeds in a saucepan over a medium heat. Bring to a low simmer and cook for 10 to 15 minutes or until it begins to thicken to a jammy texture. Set aside.
Meanwhile, whisk together the egg and milk in a shallow bowl. Dip the bread into the mixture, coating both sides evenly and let some of the liquid soak into the bread.
Heat the oil in a non-stick frying pan or griddle over a medium heat. Cook the bread slices for about 3 to 5 minutes per side, or until browned.
Divide the toast onto plates and top with the berry chia sauce.
More flavour: add lemon juice, vanilla extract and/or cinnamon to the berry sauce.
Additional toppings: cottage cheese, whipped coconut cream, live Greek yoghurt or coconut yoghurt, hemp seeds or nuts.
