French toast with berry chia sauce

Ingredients

  • 2 cups berries (fresh or frozen)

  • 1 tbsp maple syrup

  • 2 tbsp chia seeds

  • 2 eggs

  • 1/4 cup unsweetened almond or oat milk

  • 4 slices of bread (wholemeal)

  • 1 tbsp extra virgin olive oil

Preparation

  1. Combine the berries, maple syrup and chia seeds in a saucepan over a medium heat. Bring to a low simmer and cook for 10 to 15 minutes or until it begins to thicken to a jammy texture. Set aside.

  2. Meanwhile, whisk together the egg and milk in a shallow bowl. Dip the bread into the mixture, coating both sides evenly and let some of the liquid soak into the bread.

  3. Heat the oil in a non-stick frying pan or griddle over a medium heat. Cook the bread slices for about 3 to 5 minutes per side, or until browned.

  4. Divide the toast onto plates and top with the berry chia sauce.


More flavour: add lemon juice, vanilla extract and/or cinnamon to the berry sauce.

Additional toppings: cottage cheese, whipped coconut cream, live Greek yoghurt or coconut yoghurt, hemp seeds or nuts.
