Roasted tomato and basil on toast

This is a very simple option for breakfast or lunch. You can make it in advance and take to work with a portion of bread to toast at the office for an easy healthy win.

Ingredients

  • 2 tomatoes (large, cut into quarters)

  • 2 tsps extra virgin olive oil

  • 3 tbsps basil leaves (chopped)

  • 1/4 tsp sea salt

  • 2 slices of sourdough (toasted)*


*if sourdough isn't available use a wholegrain option

Preparation

  1. Preheat oven to 200 degrees celcius. Line a baking tray with parchment paper or foil.

  2. Place the tomatoes on the baking tray. Gently toss with the oil, half the basil and salt. Roast for 15 minutes.

  3. Toast your bread and spread the roasted tomato mix over the top of each slice and spinkle with the remaining fresh basil.


Refrigerate: the roasted tomatoes will keep in the fridge for up to 5 days and are delicious cold, so you can make a double portion to have later in the week, or make in advance to take to work if you have a toaster available in the office.

More flavor: add some chopped black olives to serve.
