This is a quick, easy way to produce a super healthy granola style breakfast. Why not make a double batch at the weekend for a quick mid week breakfast option?
1 banana (ripe) OR 1/4 cup apple puree
3/4 cup rolled oats
1 large egg
1 tbsp live Greek yoghurt*
1 tsp cinnamon
*use coconut yoghurt if you're dairy free
Mash banana (if using) and mix well with all the other ingredients.
Heat a large frying pan on a medium heat (non-stick or add some olive oil) and transfer the mixture. Spread it out into an even layer.
Cook undisturbed until it looks set (about 5 minutes).
Scramble the mixture and cook the other side until browned and toasted (about another 5 minute).
Serve with a dollop of yoghurt and some fruit.
Leftovers: this one batch cooks if you want to make some to take to work; store in the fridge in an airtight container for 3 - 4 days.
Chocaholic: add 1 tbsp raw cacao powder to the mix before you cook.
