Simple banana pancakes

This easy recipe can be prepped and cooked in less than 10 minutes and is packed full of nutrients and protein to set you up for the day. Mix up the toppings, or just eat it plain.

Ingredients

  • 1 ripe banana

  • 2 medium eggs

  • 1/4 tsp cinnamon (optional)

  • 1 tsp coconut oil


Suggested toppings:

  • Fresh berries

  • Honey

  • Chopped almonds

Preparation

  1. Mash the banana in a bowl well (until quite smooth). Add the eggs and cinnamon (if you're using) and beat gently with a fork for about 30 seconds.

  2. Heat coconut oil in a frying pan over a medium heat. Add 1/4 cup of the batter at a time to form pancakes, cooking for 1-2 minutes per side.

  3. Serve with the chopped almonds, sliced berries and a drizzle of honey.



Top tip: the mixture is quite thin, so you might find it easier just to pour it all into the pan and cook one big pancake, quartering it with your spatula before you flip it over.


Like it sweet: Add blueberries or dark chocolate chips to the batter.
