Chia seeds are highly nutritious; they contain antioxidants, minerals, fibre, protein and omega-3 fatty acids. These nutrients play a role in supporting multiple body functions and systems.
They absorb liquid and form a gel, which means they can be used to thicken sauces, as an egg replacement or to make a sugar-free jam. Here we mix them with a few ingredients and pop in the fridge overnight to provide a delicious breakfast or snack.
We love this as an afternoon snack; just pop it in an airtight container, grab a spoon and take it to the office with you.
Ingredients
1/3 cup chia seeds
1 cup unsweetened coconut milk
2 tsps pure maple syrup
1 1/3 tsps vanilla extract or paste
2/3 cup of berries to serve
Preparation
Whisk together milk, maple syrup and vanilla extract in a bowl
Mix in chia seeds, stir well and cover. If you want to eat this on the go, divide the mixture into two portable air tight containers.
Refrigerate for 3 hours, or overnight
Top with berries to serve
No coconut milk: you can use any unsweetened plant-based milk.
