Chia seeds are highly nutritious; they contain antioxidants, minerals, fibre, protein and omega-3 fatty acids. These nutrients play a role in supporting multiple body functions and systems.

They absorb liquid and form a gel, which means they can be used to thicken sauces, as an egg replacement or to make a sugar-free jam. Here we mix them with a few ingredients and pop in the fridge overnight to provide a delicious breakfast or snack.

We love this as an afternoon snack; just pop it in an airtight container, grab a spoon and take it to the office with you.

Ingredients

  • 1/3 cup chia seeds

  • 1 cup unsweetened coconut milk

  • 2 tsps pure maple syrup

  • 1 1/3 tsps vanilla extract or paste

  • 2/3 cup of berries to serve

Preparation

  1. Whisk together milk, maple syrup and vanilla extract in a bowl

  2. Mix in chia seeds, stir well and cover. If you want to eat this on the go, divide the mixture into two portable air tight containers.

  3. Refrigerate for 3 hours, or overnight

  4. Top with berries to serve

No coconut milk: you can use any unsweetened plant-based milk.
